New Orleans Chef to Present Cooking and Drinks Class at WTAMU

CANYON, Texas—Emile Stieffel will prepare a menu of delectable food and drinks when the Office of Continuing Education at West Texas A&M University brings the award-winning chef back to campus for his annual cooking demonstration Friday, July 26 at the Alumni Banquet Facility.

The class will run from 4:30-6:30 p.m. with demonstrations, tastings and opportunities to participate in the preparation of New Orleans style food and drinks. The cooking class will run from 4:30-5:30 p.m. with Stieffel preparing a menu of crawfish and shrimp pasta shells, crawfish pirogues, dirty rice, pralines and cranberry relish.

At 5:30 p.m. Stieffel will switch to the beverage portion of the class. Participants will sample a variety of drinks that include Eggnog, Abita Michelada, Gas Blender Drink, Black Voodoo, Abita Strawberry Beer and Planter’s Punch.

Stieffel, whose family roots go back to the early 1700s when New Orleans was still a settlement, is the owner/operator of Aurora Catering. His cooking has earned him numerous awards including the Golden Spoon Award from 2009-2012 and the three top trophies at the 2009 Louisiana Tailgate and BBQ Festival. Stieffel also was featured on “Throwdown with Bobby Flay” and won the Jambalaya Jam with his recipe for Throwdown Chicken and Sausage Jambalaya. He is known as a great ambassador for the culinary culture of southern Louisiana and New Orleans and enjoys sharing his knowledge with others.
